british chef joins JIB

June 2008

The Joji Ilagan Foundation, College of Business and Tourism will be offering the Certificate 111-Hospitality (COMMERCIAL COOKERY) on June 2008.

Ms. Joji Ilagan Bian had signed an Educational Cooperation Agreement with one of the largest TAFE schools in Sydney, Australia last February 2008. Under the agreement the TAFE New South Wales Southwestern Sydney Institute will allow the the Davao based Tourism and Hospitality school to offer the Commercial Cookery Course here in Davao City. TAFE will be sending a full time Australian Director of Studies to be based in here in Davao City to ensure global standards.

Peter Buckby, Master in Culinary Arts at Birmingham College of Food and PhD in Education, obtained assessor qualification in DS 31,32,33,34,35 and 36. Buckby has been a qualified auditor for ISO and HACCP by Lloyds of London. In 1998, he has been a verifier for PACUCOA in the Philippines. In 2002, he was an approved trainer for all levels in CIEH and The Royal Institute of the Public Health. He had been the Executive Chef for Stand Hotel Ltd in setting standards in 60 hotels nationwide. He was also an Executive Chef for Tri – Service Consultancy where he troubleshoots over 200 hotels around the world i.e. Marriot, Hilton, Waterside Restaurant UK 3 Michelin Stars, Four Seasons New York 3 Michelin Stars, among others. He had been setting standards to meet the new requirements for the food industry in Crown Melbourne, Regency Casino Thessaloniki, Grand Hyatt Fukuoka, Dan Hotel Eilat and Crowne Plaza Panamericano Buenos Aires. From 1982 to 1992, he created new standards in HRM that being used in UK and EEC schools. Buckby won various awards and nomination in Culinary Arts worldwide and has been active in consultancy and teaching.

In line with JIB’s Discover Australia Program, Peter Buckby will handle Culinary and Commercial Cookery Department. Develop skills and training through maximum theoretical and practical hands-on-experience to prepare you to work in a commercial kitchen of a hotel, restaurant or any retail systems and resources with competent chef trainer guiding you toward your professional goals. Aside from having an international chef trainer, graduates of this course will be awarded with Australian Certificate of qualifications issued by TAFE New South Wales South Western Sydney Institute.
